Malaysian Curry Chicken with Potatos

Ingredients
1 Whole Chicken 400g (cut into pieces)
3 Potato (cut into pieces)
20g Shallot (Chopped)
20g Garlic (Chopped)
1 can Conconut Milk (400ml)
Sugar, Salt, MSG
100ml Water
Ingredients for the curry sauce (*)
200g Red Curry Paste
300g Red Chilli
20g Turmeric
20g Galanga
20g Lemon Grass
10g Belacan
Procedures
1. Pound the ingredients for the sauce (*) with the blender until finely paste.
2. Heat up the dry wok. Add in chopped shallot and garlic. Stir fry for a while till fragrant, add the sauce prepared in Step1, stir-fry until aromatic.
3. Add in chicken pieces and potatos and stir fry for a while, pour in water and seasoning, bring to boil and cook for further 25 minutes.
4. Lastly slash in the coconut milk then bring back to boil and it is ready to serve.
