Braised Shredded Black Fungus with Glutinous Rice Wine Chicken

Ingredients
1/2 Organic chicken
20g Black fungus
50g fresh ginger (shredded)
200ml Glutinous rice wine
200ml Shaoxing Wine
2 table spoons sesame oil
1/2 table spoon light soya sauce
Procedures
1. Rinse the chicken and cut into convenient pieces. Soak black fungus into water until softened. Remove chain well and shred finely.
2. Heat up sesame oil to saute the ginger shreds with low heat until fragrant and golden browned. Add in chicken and shredded black fungus, stir fry till aromatic and well combined.
3. Add seasoning and bring to a boil. Blend in the glutinous rice wine and Shaoxing wine. Continue to cook for further 10 minutes. Remove from heat and ready to serve.
